Country Chicken Casserole
from the kitchen of megan m4 boneless skinless chicken breasts
1 bag frozen country vegetable mix (carrots, green beans, corn)
1 can Cream of Celery soup (use 98% fat free for a health choice)
1/2 Cup lite Sour Cream
1 box Stove top stuffing, chicken flavor, prepared as to directions on box
Seasoning: lawry’s, ground pepper
Season the chicken breasts on both sides and brown on med heat in a non-stick pan sprayed with non-stick cooking spray. While chicken is cooking, prepare your stuffing and set aside. In a small mixing bowl combine cream of celery and sour cream, stir together. Add frozen veggies to mixture and stir till evenly mixed. Once chicken is browned on both sides, place in a 11×9 cooking dish/casserole dish that is lightly sprayed with non-stick spray. Top with veggie/soup mixture so the chicken is evenly covered. Top that with the stuffing. Cover with foil and bake @ 375 degrees for 30 mins. Uncover and bake an additional 10-15 mins or till sides are nice and bubbly.
