Perfect PIZZA

This will make 6-12″ pizza crusts.
2 packages of active dry yeast
1 teaspoon brown sugar
3 cups warm water (110 degrees)
2 teaspoons salt
1/4 cup olive oil
6-2/3 cups bread flour (approximately) add flour a little bit at a time until elastic.

INSTRUCTIONS:
The pans I find to work the best are the cheap tin foil pans from the supermarket. Make sure to bake close to the bottom of the oven near the burner.
Crust:
- In a mixer, dissolve the yeast and brown sugar in the water.
- Stir the salt and oil into the yeast solution. Mix in 2 1/2 cups of the flour and beat well. Then add remaining flour until elastic.
- Turn dough out onto a clean, well floured surface, and knead in more flour until the dough is no longer sticky. Place the dough into a well oiled bowl, and cover with a cloth. Let the dough rise until double; this should take about 1 hour. Punch down the dough, and form a tight ball. Allow the dough to relax for a minute before rolling out. Use for your favorite pizza recipe.
- Preheat oven to 450 degrees F. If you are baking the dough on a pizza stone, you may place your toppings on the dough, and bake immediately. If you are baking your pizza in a pan, lightly oil the pan, and let the dough rise for 20 to 30 minutes before topping and baking it.
- Bake pizza in preheated oven, until the cheese and crust are golden brown, about 10 to 15 minutes.
Pizza:
Let Dough rise, about an hour, Punch down, divide dough into 6 pieces, roll out with rolling pin, place cooking pan over top and cut dough with pizza cutter 1/2″ larger than pan.
Remove excess dough, and fold dough into four pieces as shown below. This makes it easy to transfer to pan.
Grease Pan with olive oil and sprinkle with corn meal.
Place folded dough onto pan and unfold.
Dough should fit almost perfect in pan, press to sides to make fit. Let dough rise for approximately 1/2 hour, then add sauce.
Add sauce and other ingredients as desired.
Sauce, hamburger, cheese, pepperoni, then more cheese, sprinkle with Italian seasoning
Place in 450 degree oven towards bottom of burner, bake for approximately 10 minutes, until crust and cheese is brown
Finished Pizza.
