Pineapple Upsidedown Cake

2 Tablespoons margarine or butter
1/3 cup packed brown sugar
1 8oz can pineapple slices, drained and halved
Maraschino cherries
1 tablespoon of water
Cake Ingredients
1-1/3 cups flour
2/3 cup sugar
2 teaspoons baking powder
2/3 cup milk
¼ cup margarine or butter, softened
1 egg
1 teaspoon vanilla
Directions
Preheat oven to 350 degrees.
Melt margarine in 9”x1/1/2” round baking pan, stir in brown sugar and 1 tablespoon of water. Arrange pineapple and cherries in pan.
Mix flour, sugar, baking powder. Add milk, margarine, egg and vanilla. Beat with electric mixer on low speed till combined, beat on medium speed for 1 minute. Slowly pour batter over pineapple and cherry arrangement to avoid disturbing them.
Bake in 350 degree oven for 30 to 35 minutes or till a toothpick inserted near the center comes out clean. Cool on wire rack for 5 minutes, loosen sides and invert onto plate, serve warm.
