Apple Stretchy

2 cups flour
2/3 cup shortening
1 teaspoon salt
1 egg yolk beaten with 1/2 cup milk
1. Cut shortening into flour and salt.
2. Add egg and milk mixture and form dough.
3. Divide dough into two balls, press one in bottom of 9×13 baking dish.
Filling:
5 cups apples, peeled and thinly sliced
1 cup white sugar
1/2 teaspoon cinnamon
2 tablespoons flour
1 tablespoon butter
Mix apples, flour, sugar, butter and cinnamon as you would for pie. Spread thin layer of apple mixture over crust in pan. Top with rest of dough which has been rolled out. Stretch to cover and pierce with fork here and there. Beat egg white and brush on top. Sprinkle with sugar. Bake at 375 degrees for 45 minutes. This is a very thin pie.
